Ingredients
1⁄2 cup Pua-ā-Tāne Wild Forest Honey by Manawa Honey NZ
2 tbsp oil, as you prefer
3 cups whole or rolled oats
1⁄2 cup flaked or shredded coconut
1⁄2 cup seeds – mixture as you prefer of sesame, sunflower or pumpkin seeds
1⁄2 cup nuts – mixture as you prefer of walnuts, almonds, pecans, peanuts
1 cup of dried fruit – mixture as you prefer – chopped apple, cranberries, apricots, peaches, sultanas
Directions
Combine the Pua-ā-Tāne Wild Forest Honey and oil in a saucepan over medium heat. Cook, stirring often, for 4 minutes – do not allow to burn.
Preheat oven to 150˚ Line a large, deep baking dish with baking paper.
Combine all remaining ingredients except the dried fruit in a large bowl. Pour over warm honey mixture. Mix well to combine.
Spread mixture evenly over the base of dish. Bake for 25 to 30 minutes, stirring every 10 minutes, or until golden and toasted. Remove from the oven and dd the dried fruit, mixing all together.
Set aside to cool completely when the muesli will have formed some crisp clusters. Crumble these clusters down as you put the muesli into an airtight container to store.
Notes
This muesli is definitely the great starter to the day as a breakfast with yoghurt or milk, topped with a fruit compote. Use it also for topping fruit puddings, or ice-cream – health-giving and crunch all in one.
With lighter dried fruits in your muesli such as apple or apricots, our Pua-ā-Tāne Wild Forest Honey or Tāwari Honey do best. If you use darker fruits such as plums and sultanas, then our Rewarewa Honey or Mānuka Honey will give a richer depth of flavour is the best complement in your toasted muesli. If you prefer you can add the fruit into the muesli when in the oven but just for the last few minutes as longer can dry it out too much, and make it hard to eat!
Use seeds, nuts and dried fruit as you have in the cupboard or in combinations that you prefer.
You can double the recipe if you wish but best not to do more than can be eaten in a few months. Small batches are great if you have the time to do this as then you can vary each batch with different combinations of seeds, nuts and fruits and never get bored with your muesli every-day.
Try combinations like apple and pecan or cranberry and almond. Our favourite at Manawa Honey is peaches and sultanas for dried fruit, with sunflower seeds and walnuts.
The recipe is really for the health-conscious but if you would like to spoil someone then add some chunks of white and/or dark chocolate when the muesli is completely cool. Decadence at breakfast time is allowed for some isn’t it?
