Ingredients
125g butter
3/4 cup Manawa Pua-a-Tane Wild Forest Honey
2 eggs
2 cups feijoa flesh, scooped from the skin
1 tsp baking soda
2 tbsp hot milk
2 cups flour
1 tsp baking powder
½-1 tsp cinnamon (optional, according to your preference)
¼ cup walnuts, chopped to chunks
Orange & Honey Icing
3/4 cup Icing Sugar
1 tbsp Manawa Pua-a-Tane Wild Forest Honey
Juice and rind of 1/2 an orange
25g butter
1 tbsp hot water
Directions
Preheat oven to 180°C.
Cream butter and Pua-a-Tane Wild Forest Honey; add eggs one at a time, beating well after each addition. If it curdles add a spoonful of the flour to help it bind again. Add roughly chopped feijoas; then baking soda dissolved in milk. Stir a little, then fold in flour, baking powder and cinnamon, sifted together, until just combined. Do not overmix.
Turn into a cake tin, lined with baking paper. Cook 180°C in preheated oven for 50 min or until cooked.
Cool in tin for 10-15 mins before turning out and cooling on a rack.
The icing is optional as this cake is delicious as it is. To make it, mix all the ingredients with the Pua-a-Tane Wild Forest Honey until smooth. Spread onto cake when cold, and leave to set before you cut into the cake, if you can wait that long!
Notes:
Our Pua-a-Tane Wild Forest Honey is best for this recipe but if you prefer you can use Tawari Honey or Rewarewa Honey. I don’t recommend Manuka Honey – its taste can tend to overwhelm the spice and feijoas.
You can use frozen feijoas (thawed) for this cake. They won’t look pretty but it’s all the same for this cake. So freeze your feijoas when you have surplus in season. Just scoop out onto baking paper on a tray and freeze so you can pack away free-flow in a bag or sealed container. You can then get what you need for making this cake recipe, or for smoothies. So good!
You can freeze this cake easily so double the recipe – eat one and freeze one. For the freezer, just wrap and seal the cake, without icing, in waxed paper or plastic. So convenient for when you need something special and you’ve no time to bake.
Turn this cake (without icing) into a delicious dessert – just warm it a little in the microwave, then serve with yoghurt or whipped cream.
